Bacon, Cheddar and Spinach Strata



1 TBL bacon grease

1 loaf day old bread, cubed

12 larg eggs

salt & pepper

1 pinch cayenne pepper

1 pinch freshly grated nutmeg

2 1/2 C heavy cream

1 lb ground sausage, browned, or sliced bacon, cut crosswise into 1/2-inch strips

10 oz frozen spinach, thawed, squeezed dry and thoroughly chopped

12 oz. shredded extra-sharp Cheddar cheese, divided

Heat oven to 350. Spray bottom and sides of 9 x 13-inch baking dish. Place bread cubes in a large mixing bowl. Crack eggs into a separate mixing bowl; season with salt, pepper, cayenne, and nutmeg. Add cream; shisk thoroughly. Pour egg/cream mixture to baking pan; spread evenly over bottom and press down a bit. Top with half the grated cheese. Finish with remaining bread/egg mixture; spread evenly and press down slightly. Sprinkle with remaining cheese. Cover; let strata sit at room temp for an hour before baking. Bake until set, about 45 minuters. Broil a minute or two to brown thp, if desired. Serve.
